Recipes: Chicken Noodle Soup

This recipe is brought to you by: Best Kept Recipes : Chicken Noodle Soup

5 boneless, skinless, chicken breasts – parboiled, cut into chunks
1 quart canned or boxed chicken stock
1 large white onion
3 minced garlic cloves (from the jar)
3 large peeled, carrots, cut into coins
3 celery stalks, chopped
Thyme
1 bay leaf
Kosher salt & pepper
Uncooked egg noodles, or ditalini – that’s good, too

Place the chicken stock and 1 quart of cold water into a large pot and bring to a boil. Add all the veggies and spices. Simmer about 20 minutes.

Add about 1/2 the bag of egg noodles and bring to a boil. Add the chicken chunks. Lower heat to a good simmer and cook until noodles are done. Remove bay leaf, check seasonings. Serve.

  1. I also wanted to state the reason why I chose this recipe is because it is one of my personal favourites. I absolutely love home made chicken noodle soup even more so when its this recipe.

    However, my own little touch is I like everything salty so I add a ton of Adobo to it.

  2. We are chicken soup lovers at our home too…but, my best ones are always by accident, being I’m boiling chicken for another recipe, make a good stock and convert that into soup. Whenever I try to do it free-hand, it’s never as good.

    This recipe looks easy enough. Does it matter jarred garlic? We always have fresh at home…

    Also, did you just say “Adobo” like in filipino food!? If so, small world–I’m half Filipino.
