Recipes: Best Meatballs

1-1/2 lbs. ground beef
2 large eggs – beaten
1 large minced garlic clove
1/2 cup grated Pecorino Romano
1/2 cup plain bread crumbs (do not use seasoned)
2 Tbsp. chopped flat-leaf parsley (preferably fresh)
1 tsp. kosher salt
Ground black pepper
1/4 cup extra virgin (or not) olive oil

In a large bowl, beat the eggs, then add in everything up to the olive oil. Mix it thoroughly together with your hands. Shape the mixture into small (walnut sized) balls. You will need to occasionally wet your hands with water so mixture doesn’t stick. Set them all on a tray or plate while you heat the oil.

Heat the olive oil in a large heavy skillet over medium heat. Add the meatballs and fry them until they are browned on all sides. This is going to take about 15 minutes. Carefully transfer them to a plate or tray with tongs.

Carefully transfer them to your sauce (or mine) and cook through, about 30 minutes.

  4. A friends pop gave me a meatball recipe years ago, and I swear it called for 1/4cup of garlic powder as well as some other key ingredients.
    When I was in college, I swear, my Italian roommate said they were better than his mom’s. Although being a starving college student might have made them taste really awesome as well.
    But your recipe looks like it would be great. I would have to double the garlic.lol

  7. what kind, or taste is this Pecorino cheese? Never heard about it here. Can I replace it with some other cheese?

  8. Pecorino is stronger than paramsan god i hate spelling the names of cheeses I know I butchered them. Once I switched from parm to pecorino, when I had parm again it tasted like watered down cheese.
